About our Black Garlic
Australian Black garlic is a type of caramelized garlic. It undertakes a long process of temperature and humidity over the course of 40 to 70 days.
Our Australian Black Garlic is not fermented but produced by a chemical reaction of the sugars and amino acids, causing the cloves to darken called a Maillard Reaction.
This reaction is also what causes browning on Meat, Coffee, Breads etc. This long process gives the garlic a completely different flavour profile.
Hallstrom Co was originally created out of a hobby and interest in the science in creating chemical free Black Garlic. The first machine we ever Built was from a retro kerosene powered Hallstrom fridge, hence where our name originated from.
Now days though things are little more serious with production, and we are very proud of where we are today.
Our Black Garlic is made in batches to ensure the very best in quality and taste. Each taking many days to produce, and the results are outstanding.
Sticky caramelised Black cloves are formed by a Maillard reaction, this is caused by the sugar and amino acids naturally found in the garlic reacting and caramelising.

More About Black Garlic
Black Garlic has become a super food loved the world over by professional chefs, home cooks, nutritionists and health professionals.
Black garlic originated in korea and is centuries old, first used as a health product and still used in many health supplements.
Our Black Garlic is rich is amino acids and has almost double the amount of antioxidants as white garlic, and also has none of the odours associated with white garlic.
The Black Garlic also contains an additional very specific compound called S-Allycysteine (SAC) in very high concentrations, compared to White Garlic which is water soluble and thus absorbed easily within the body. S-Allylcysteine has been shown to assist with the absorption of allicin. This makes Black Garlic much more effective than White Garlic for all the benefits mentioned above and additionally it is well tolerated by the digestive system so the chance of gastric distress is completely minimised.
